Pumpkin Treats are Always a Good Idea


Fall. Has. Finally. Arrived. 

I feel like I have been waiting for this moment for months. When Starbucks started serving their PSL (even if it was in August) I knew it was only a matter of time before I could start baking my favorite treats. 

Here are my two go to recipes for fall, that obviously have pumpkin as an ingredient. They are light, fluffy, and utterly delicious. 

Pumpkin Chocolate Chip Cookies 

2 cups flour
2 tsp baking powder
3/4 tsp baking soda
1 1/2 tsp cinnamon
1/2 tsp nutmeg
1/8 tsp ground clove
1/2 tsp salt
1 egg
1/2 cup light brown sugar
1/2 sugar
1/2 vegetable oil
1 tsp vanilla
1 cup canned pumpkin
3/4 cup milk
3/4 cup semi-sweet chocolate chips

1. Preheat oven to 350 degrees.
2. In mixing bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, cloves, & salt. 
3. Using an electric mixer, mix both sugars and oil.
4. Add in egg, pumpkin, & vanilla.
5. Continue to mix and slowly add flour mixture, then chocolate chips.
6. Drop 2 tbs dough on non-stick baking sheet.
7. Bake for 12 minutes.

Pumpkin Bread

Loaf pan (This recipe makes 5 loaves, I buy disposable loaf pan so I can cook all of them at the same time and makes it easy to gift!)
5 eggs
2 cups sugar
1 1/4 cup vegetable oil
1 (15 oz) canned pumpkin
2 cups flour
2 (3 oz) pudding mixes
1/2 tsp salt
1 tsp cinnamon
1 tsp baking soda
1/4 cup walnuts (optional)
1/4 chocolate chips (optional)

1. Preheat oven to 325 degrees.
2. Spray cooking spray or grease on 5 loaf pans
3. Beat eggs in a mixing bowl.
4. Add oil and pumpkin, beat until smooth.
5. Combine remaining ingredients into mix.
6. Pour batter into the 5 pans.
7. Optional: If you want to add the walnuts and/or chocolate chips you can add them while the mix is in the pans. I usually do 1 plain loaf, 2 with walnuts, & 2 with chocolate chips.
8. Bake for 50-55 minutes. 
9. Cool on wire racks.
