In today’s busy world, who has time to cook?

I thought I was busy  before I had kids. Ha! Now as a mom of two little ones, I feel like I’m always going, going, going! Moms – you know exactly what I mean. As soon as the kids wake up, it’s go time. There are a million things to do and then you look up and it’s dinner time.  Ah!!!  Who’s got time to cook?

YOU DO!

The number one reason people give for not cooking at home is that they don’t have time. I don’t think time is really the whole problem – it’s also about priorities. If eating healthy is important to you, then you will find the time to plan your meals and cook. Eating at home is also healthier and lower in calories. You have control of every ingredient that goes into food when you make it at home.  This is especially important if you have kids, as you want them to start healthy eating habits from a early age.

I try and cook meals that are healthy and quick. I am not a fan of complicated recipes with 25 exotic ingredients, so I try and keep my meals clean with just a few ingredients.  I stick to the basics like veggies, grains, and protein.

Here’s a great healthy fish dish that can be prepped in 5 minutes.

 

Honey Lemon Salmon

2-3 Salmon Fillets

Juice if 1.5-2 lemons

2 tbsp. honey ( I prefer Manuka honey because of its anti-bacterial properties)

2tbsp olive oil

  1. Preheat oven to 350 degrees
  2. Line pan with aluminum foil
  3. Dip both sides of salmon in the 2tbsp of olive oil and place on foil
  4. Mix the lemon juice and honey together in a bowl.
  5. Pour the mixture of lemon and honey over the fillets in the pan
  6. If you like your salmon a little sweeter, you can drizzle a little extra honey over the top of each one.
  7. Bake at 350 or 25-30 minutes until cooked.

 

Slice up some organic cucumbers and cherry tomatoes and voila you have a delicious healthy meal! Perfect for a busy night!
